You can get the Shot Blocked trophy during the Flashpoint mission.
Play through the mission until you get to the room with “medics”. One of them will ask for your help. Ignore him and wait for the medic at the far back on the right side to throw a weapon to the guy on the left. To get the trophy, shoot the weapon in mid-air before the other guy catches it. If you miss, just reload the last checkpoint and try again.
